Couple of Tarts

 This Blog has been a bit birding heavy lately, rightly so, but with heavy rain all day today and me being a bit of a fair weather birder I decided to do a bit of baking! Due to Christmas extravagance I'm on a bit of a diet at the moment, me weight is currently 14st 4lb and heading north quickly, so need to get down to my BMI of 13st 3lb, so felt cakes were out of the question so decided to make a Lemon Tart, got fruit in it so can't be to bad!! Found a new pastry recipe see the link. Hate to leave Mary Berry but in fairness this pastry was easy to make and roll out which is where most of my disasters usually happen, all Organic of course!!

Bit of Shrinkage! But not to bad!!


So to the filling, basically Juice and Zest of a couple of Lemons, Icing Sugar, Butter, 3 Eggs and  3 Egg Yolks. ( appreciate not looking good for the diet😁 ) Whisk all the ingredients in a saucepan til it thickens into a nice custard, which sounds fairly easy but actually involves whisking so hard you nearly break your wrists!!! This is all to stop it splitting which I managed to do though it seemed to take a lot longer to thicken than the Recipe suggested!!! Recipe at the link!

Pretty easy recipes to follow hopefully will be tasty!

With a bit of Pastry left over I made a couple of small cases after much debate Margie decided I should make some Cornflake Tarts. ( think she regressing back to school dinners😁) So we only have Organic Mesa Flakes, so a bit of Strawberry Jam in the bottom of the pastry cases, Butter, Syrup and Brown Sugar melted in a pan mix in the flakes, when flakes are coated in the syrupy mix, put the mix into the cases so that all the Jam is covered quick five minute blast in the oven and they are done!! Top tip don't put your finger in the mix to see if it is hot enough, it was😢😱!!


Cornflake Tart maybe should have trimmed the pastry off, leaving it on sorted the shrinkage problem!!



The Finished products bit rustic but looking good!!


My smoothing out skills may need sharpening but pretty pleased with this!

Well the Cornflake Tarts were delicious not really a surprise, Butter, Sugar, Syrup and strawberry Jam can't really go wrong and the pastry was lovey and crisp.
Despite eating the Cornflake Tart I also had a small slice of the Lemon one purely for quality control reasons you understand!! Equally delicious the pastry equally crisp, no soggy bottoms here!! A very tart Tart!!
Despite not sieving the mixture, come on who can be bothered to phaff about like that, it was a really smooth texture
